A Delicious Dinner

Dinner last night:

The menu:

  • Tilapia with capers, onions, olive oil, chili pepper, white wine, sea salt, & cracked black pepper
  • Stir fried broccoli with olive oil & lemon
  • Quinoa with black bean & corn salad mixed in

I’m very fortunate to have a husband that it such a good cook – it was so delicious!

  4. Girl, you got me over here drooling! Can I say”Yum!” That dish looks so good. I have to try it. It’s something about food that just seems to taste better when guy’s cook it. I mean, don’t get me wrong, us ladies can throw down, but it’s just something about a beautiful dish created by a man, especially the one’s you love, that just taste and look fabulous. This is a delicious healthy meal, I know it was divine. I would love the recipe (measurements) to this dish.

  9. The Fish
    Step 1: salt & pepper the fish to taste
    Step 2: Saute fish in olive oil and butter in pan for about 3-4 minutes per side, squeeze lemon on each side while cooking,
    Step 3: Remove fish from pan & set aside inside tin foil to rest while making sauce. Add a little more lemon to soak in to fish while resting.
    The Sauce
    Step 4: In same pan, add onions, garlic and chopped chili’s (fresh or dried, optional) add more olive oil too ( approximately 1/4 cup onions, 2 cloves garlic, 1/2 of small chili for 2 fillets of fish)
    Step 5: Cook till soft, add white wine to deglaze pan – cook off for about 2 mins at medium high heat. l
    Step 6: Lower heat, add 1 tablespoon of organic butter, capers (about 1 tablespoon) & the rest of the lemon*roughly 1/2-1 lemon throughout process depending on how lemony you like fish)
    Step 7: Let the mixture reduce and slightly thicken, add more salt pepper to taste
    Step 8: Pour over fish
    The Broccoli
    Step 9: Combine olive oil (enough to cover bottom of pan), a half clove of garlic in, a sprinkle of chili flakes, & ground pepper in a hot pan
    Step 10: Turn to medium-high let cook until fragrant
    Step 11: Add broccoli, toss in pan to coat with garlic and chili pepper
    Step 12: Cook for about 10 mins, adding rest of garlic in halfway.
    Step 13: Cook until browned. Squeeze lemon over broccoli towards the end.
    The Quinoa
    Step 14: Follow directions on box :)
    Step 15: Add favorite veggies and/or beans (this one had corn & black beans)

    Tell your Chef of a husband I said “Thank You” my family is going to love this one. This is a five star meal. Love all the healthy ingredients. I am a serious fan of capers and garlic and lemon juice and onions and chili’s, must I go on. Thank you so much again for sharing this recipe. Can’t wait to try it.
