The Vegetable of the Day…

…is definitely cabbage! I am a huge fan so I am really looking forward to dinner tonight. I like the corned beef and potatoes too, but I am definitely most excited for the cabbage.

If you happen to enjoy it too (or want some incentive to give it a try), you might appreciate knowing that cabbage is very high in both vitamin K and vitamin C. In addition, studies have shown that consuming cabbage can help lower cholesterol and even prevent cancer.

Another reason I’m excited for today – after years of eating and loving my Aunt Ellen’s Irish Soda Bread, I just got my hands on her recipe (originally my 100% Irish grandma’s) so I think it’s time that I give it a try…wish me luck! :)

    after living in korea i have a new appreciation for cabbage. kimchi is a staple at every meal and cabbage is delicious cooked in spicy stews!

  2. this is shameful to admit, but the only cabbage i have ever liked is the one that comes in a container from KFC — their coleslaw is rad.

  3. I just love corn beef and cabbage! I had wanted to go to a restaurant that only has it on their menu today, but it didn’t work out. I’m thinking I might need to make my own now!

    So sorry I’ve been absent from your blog for a while but I see you’ve continued doing wonderful things! I love cabbage too…it’s one of my favorite veggies and so fabulous for detoxing. I just hate that it can cause gas! How did the Irish Soda Bread come out? I found a great gluten free recipe for one (which I haven’t tried yet.) :-)

    We made shrimp tacos with lime crema and cabbage and it was delicious. I have to admit that I need to find more recipes for cabbage though.
